got a 1991 sporty i want to just run a headlight, coil, and tailight... is there a easy wiring harness for this or do I need to do it old school with wires and solder..... any insight will help

There's a sticky on this in this forum, or can find it by searching "sportster wiring essentials" or something ...it's a post by billdozer. Really helpful post with a perfect bare bones wiring diagram.
I did my 03 using that wiring diagram and it's perfect.
I'm not sure I totally understand your last question but "wires and solder" are certainly required.
You should probably think about running a circuit for a charging system too! haha
