Seems to be sorted. Apparently the two previously installed clutch springs combined to be too strong and they were stripping the adjuster screw. It makes complete sense that we could dial it in for one or two pulls of the lever and then it would be screwed up on subsequent pulls.
We replaced the two springs with one (I forget the brand) made for replacing the two.
Decided to go with electronic ignition and a hotter coil while we were fucking with shit.
The weird thing is that it chokes out with my air cleaner on. The shop owner kept insisting that I run the S&S cleaner that came with the carb. I know they are the best, but I hate the way they look.
But, as of now, it looks like all systems are go for MEXICO!!!!!

Had the same issue on my 1972 adjust adjust adjust...found out the clutch for a 1974 will fit in some earlier models...I forget how far back. It has "crush tubes" that go in and you torque the nuts all the way and never have to deal with the 11/32 jazz. Been 3 years on mine trips/rallies or whatever and haven't had to touch it. Valvoline 20/50 for motorcycle wet clutch is what I use.Comment
