I am building my first Triumph custom, it's going to be a Cafe/Bobber/Street tracker. Trying to incorporate elements of all. The question is, how much can I lower the front forks using the original frame without messing up the handling?

if you only lower the forks and not the back end at the same time, you will be decreasing trail, which will make it turn-in to corners faster, but less stable at high speeds. The closer your trail is to zero, the more nervous it's going to be in a straight line.

If you do anything you will "mess up" the handling.

I know what you mean bud.........like a striped down bike.......minimalist....low seat....but not to the extent to a hardtail or any welding??

pick a style and build it.
Usually when you try to incorporate everything you like on one build it looks like a monkey F@&KIN a walrus.
If you want a stripped down street bike, just say that.
